PUMPKIN SPIRALS WITH BOLETUS AND PARMESAN CHEESE



INGREDIENTS:
400g of pumpkin spirals
120g of boletus
100g of parmesan cheese
Salt, pepper, olive oil and curly parsley.

PREPARATION:
1. Boil the pumpkin spirals together with a pinch of salt for 1 minute.
2. Place the boletus in a frying pan with 2 decilitres of olive oil, sauté for 1 minute and add the pumpkin spirals. Remove from heat, allow to fry lightly for 1 minute and season.
3. Serve and sprinkle grated parmesan cheese and chopped pasrley over the top to decorate.
